There has been tons of news about the seemingly sudden rise (at least in awareness) of gluten and it’s very very negative effects on people. I’ve been asked a lot lately about my stance on it. I will NEVER pass judgement on anything without first knowing the facts. I didn’t know enough to have an opinion…now I do.
My official stance on grains and wheat and gluten:…BAD
Grains go through a serious amount of processing just to become bread in the first place (you probably won’t be walking in a field and see a loaf of bread growing there, right?) and for that matter cooking food changes it from a whole food but jeez we’d never eat if we got too strict either!
I obviously will not stop eating grains/bread cold turkey today (I actually never keep bread around the house. I’m not sure why that is. I like it) and I’m all about being a realist. No one likes a fanatical health nut 😉
But I have had friends throughout my life that did not share my love affair with food. They had the opposite reaction. Eating to them was a choir required to live. Food hurt them afterwards and they could never really figure out why. I believe those people were gluten intolerant before we had a name for it.
